Baked fries with creamy curry sauce 🍟
This was one of the most enjoyable meals this week! I had been craving baked potatoes for so long (even though I have some form of potato every single day 🥔 surprised I’m still not a potato).
I preheated the oven to 230°C and I washed and sliced 600g of potatoes. In a bowl I mixed the potato slices with salt, garlic powder and pepper. They were in the oven for 40min.
While they baked I prepared the sauce (2 portions) by blending:
• 1 peeled zucchini
• 100g firm tofu
• 20g raw cashews
• 1 tbsp mustard
• 2 tbsp apple cider vinegar
• Some drops of liquid sweetener
• 1/2 tsp garlic powder
• 1/2 tsp curry powder
• 1/2 tsp salt
• Splash of water until it blended properly
